Baja 500 Shrimp Tacos

Founded in 1969 The Baja 500 is a grueling Mexican off-road motorsport race on the Baja California Peninsula. Open to any vehicle, hundreds of racers travel from all over the globe each year to test the limits of both man and machine, and prove that they are worthy of finishing the course. Riders endure grueling heat and a dangerous landscape of sand dunes, blind drop offs, and the unforgiving cactus that threatens to tear tires and flesh apart as they navigate the challenging course across the desert. The Baja 500 will show a person exactly how far their limits truly are both physically and mentally as they endure through pure sheer will in such uncomfortable conditions, stopping only during designated mile markers and rationing their water. Not everyone finishes the Baja 500 and it takes a special breed jsut to make the attempt. Throughout the years the course hasn’t changed much with majority of events being a loop race that starts and finishes in Ensenada. This one is not for the faint of heart, and neither are these Shrimp Tacos we created in their honor, celebrating these riders ambitious spirit, and enduring dedication to the inhospitable joy of completing the Baja 500.

 

What you will need


  • Corn Tortillas

  • Jumbo Shrimp

  • 1/2 Onion

  • 2 cloves Garlic

  • 1/2 Tomato

  • 1/2 Sweet Hawaiian Bell Peppers

  • 1 Jalapeños

  • 1 Avocado

  • 2 Limes


  • 1 Orange Wedge

  • 1/2 Cup Plain Greek Yogurt

  • Goat Cheese

  • Olive Oil

  • Mango Salsa ( Click here for our recipe )

  • Salt & Pepper

  • Ground Cumin

  • Red Chili Pepper

 

Prep:

It all goes so much easier if you prep everything prior to cooking. To do this you’re going to want to get your shrimp ready in the marinade, and then while those are sitting chop up your veggies. I’m not going to go too deep into the process of cleaning your shrimp, but make sure you rinse and de-vein them before cooking.

Here is your marinade for the shrimp;

  • Olive Oil

  • Ground Cumin

  • Chili Powder

  • 1/2 Lime

  • 1 Orange Slice

Put your shrimp in a bowl and lightly coat them with olive oil. Toss in your minced garlic and dust everything with ground cumin and chili powder, then squeeze your 1/2 lime and orange slice over the top. Mix it all together so the shrimp are covered. Then let sit while you are prepping the rest of your meal. Don’t take too long because the citrus will start to cook your shrimp and you don’t want that. Get all your vegetables diced into small portions, or whatever your preference may be but make sure to slice your cabbage into small strips. Now onto prepping your yogurt sauce!

Yogurt Sauce;

  • 2-3 spoonfuls of greek yogurt

  • Ground Cumin

  • Chili Powder

  • 2 Lime wedges

Take a couple of spoonfuls of greek yogurt and mix together with cumin, chili powder, and lime juice. Stir well until mixed completely and set aside. This yogurt sauce will give that extra spice to your tacos and really set them apart!


Cooking:

Heat your cast iron pan to medium-low heat and pour in some olive oil, just enough to coat the bottom. Once the pan is heated toss in your shrimp. Keep in mind that shrimp cook extremely fast and you don’t want to over cook them or they become rubbery. Give them about 1 minute on each side to brown, basting them in the marinade the entire time. Once they are finished cooking take them out of the pan and get ready to make your tacos!


The Finish Line!

Take your warmed tortilla and put a healthy pinch of cabbage on it, two shrimps and a spoonful of marinade from the hot pan to increase those delicious fiery desert flavors. Add on top of that with some chopped onions and then that beautiful sweetness of the mango salsa. Throw in some avocado along with a big dollop of spicy yogurt sauce and sprinkle on some cilantro before crumbling robust goat cheese over the top. If you’re a professional you already know to squeeze a lime wedge over all your tacos, and hit em with that heat from you favorite hot sauce. We of course used our BroTaco Roasted Habanero Pineapple Hot Sauce, but feel free to use whatever sauce you prefer.

Now you have the PERFECT Baja 500 Shrimp Taco ready to go! Now you just need some good people and cold beers to enjoy them with!
