Cheesy Omelet Breakfast Bagel Sammy!

If you’ve ever had a girlfriend before you know the struggles of asking, “What do you want to eat?”

This breakfast sandwich is my response to her answer,

“I dunno… I want a bagel, but I also want a cheese omelet.”

Don’t worry babe, I got you!

So I hit the kitchen and started throwing this bad boy together, hoping for the best!

Here’s what you’re going to need;

Ingredients:


Unsalted Butter, small slice


Eggs, 2


Half n’ half or heavy cream, 1/4 cup


Bagel, 1


Chopped Yellow Onion, 1/2 Cup


Avocado, 1


Cream Cheese or Mayo (if you prefer)


Salt


Pepper


Sharp White Chedder, 2 slices


Sharp Chedder, handful


Olive Oil

Alright so you’re going to want to start off by oiling your pan with some olive oil and setting the heat to medium/low. You can use another cooking oil if you wish, I just like Olive oil. Now take your eggs and crack them into a bowl, adding a small slice of butter, and 1/4 cup of cream. Whisk them together well until the eggs start to get a creamy consistency, then pour gently into your pan.

Now keep in mind, if you can’t make an omelet you’re going to need to practice that a bit, otherwise it just becomes scrambled eggs, which is fine too.

Gently swirl the egg around in the pan letting the excess thin out and begin to cook. Let it sit there for a couple of minutes as it cooks. Once the edges have turned golden brown and the middle is beginning to puff up. Give it a flip!

Now that your omelet is flipped you can start dressing the inside. Lay out some finely diced onions on one half, and a few slices of avocado laid across. Then cover it that with 2 slices of aged white cheddar cheese, and a handful of shredded cheese.

Let this cook, and toss your bagel into the toaster, whichever setting you prefer.

While your bagel is toasting, gently fold the other side of your omelet over and then put some more shredded cheese over the top.

If you timed it right your bagel should finish just before your omelet finishes cooking and you have a little bit of time to dress it up.

Grab one half of your bagel and spread some cream cheese, or mayo if you want a more sandwich flavor. Take your avocado slices and spread them evenly across the top half of the bagel, then give some freshly cracked salt and pepper to taste.

Now the tricky part, you’re going to gently fold your omelet onto the bagel. I found it was easiest to slide the omelet halfway onto the bagel and then using the pan to tilt the omelet over. This creates a nice fold that should keep the bagel centered on your bagel.

Now lay down some sliced onion on top, slice in half and dig in!



If you want to try something even more different, cut some thick bacon into small chunks and cook that up, placing it inside the omelet with the diced onions and cheese. Then switch out the bagel for some Sweet Hawaiian bread. It give it a completely different flavor profile that is sweet from the bread, but salty from the cheese and eggs.

I toasted mine in the pan, but you could totally use a toaster. Keep in mind that Sweet Hawaiian bread stays soft inside when it’s toasted, so be careful not to burn it.

Follow the rest of the steps listed above, adding some Avocado Serrano Hot Sauce on top of the egg before closing the up the sammy!
